Mini Cheesecakes

Cheesecake will never be a truly low-fat, low-calorie dessert. But with a few ingredient substitutions and the help of a muffin pan, you can enjoy these delicious mini cheesecakes with a fraction of the fat and only a small amount of guilt. Naturally, my sweet-toothed 11 year old asked how many she could have. The answer, of course, was, “Just one, sweetie.” So she decided to round out dessert with some fresh blueberries.
