Halibut With Basil and Tomatoes

Monday March 26, 2007
Fresh Alaskan halibut is a real treat. It may not be cheap (that's why it's a treat), but it's truly delicious and nutritious. Halibut is a slightly sweet, mild fish that lends itself to many different flavors. Here, halibut fillets are roasted with fresh basil, sweet grape tomatoes, and a drizzle of heart-healthy olive oil. Enjoy your halibut with fresh seasonal vegetables such as asparagus and fingerling potatoes.
