Low Fat Asparagus Frittata

We get such diverse weather in the Pacific Northwest sometimes. Only last week we were inches deep in snow. Today it was a warm and sunny 70 degrees. Spring is still a few weeks away, but with the early mornings and evenings getting lighter, and the clocks moving forward on March 11th, it certainly feels like spring is coming early. This inspired me to make a light and delicious asparagus frittata. Enjoy this low-fat asparagus frittata with a whole grain roll, or a green salad drizzled with your favorite low-fat dressing.
