Chicken and Rice Soup

When my poor husband was sick in bed with flu-like symptoms, the only thing he wanted to eat was a steaming bowl of chicken soup. Chicken noodle soup was out of the question, as my husband can’t eat any wheat products, so I prepared a hearty chicken and rice soup instead. What is it about chicken soup and colds? I’m not really sure. In itself, chicken soup won't actually cure colds or flu, but it is soothing, comforting, and nutritious, too.

This isn’t just about low-fat cooking — more importantly, it’s a great gluten-free receipe (I assume the man in question has celiac).
