Lemon Blueberry Loaf

Lemon and blueberries make a nice pairing in this delicious low-fat quick bread. To cut the saturated fat content, I use canola oil in place of butter or shortening. My daughter says it tastes just like blueberry muffins, which apparently is a good thing. We all need sweet treats from time to time, so enjoy a slice of lemon blueberry loaf with your morning coffee or with some afternoon tea.
