Halibut With Lime-Cilantro Yogurt

Sunday June 25, 2006
Halibut is chock-full of important nutrients, including vitamins B6, B12, niacin, magnesium and selenium, which all contribute to a healthy cardiovascular system. Low in saturated fat, halibut is a good source of omega-3 fatty acids, which also help reduce our risk of heart disease.

The mild, sweet taste of halibut makes it one of the most versatile fish, so its flavor can be enhanced in many ways. At the same time, it seems a shame to overwhelm its delicate flavor. This recipe uses a blend of fresh chopped cilantro, lime juice and yogurt, which is spooned on top before broiling or grilling the fish.
