Chicken and Black Bean Salad

Each weekend I bring home a cold rotisserie chicken from the store. In the colder months, I use the chicken for soups, enchilada fillings and on pizza. In the warmer months, rotisserie chicken is great for salads, sandwiches and wraps. Here’s one idea for using your rotisserie chicken: a Southwestern-style chicken and black bean salad, which comes together in a snap.
