Low Fat Chicken, Asparagus and Quinoa Salad

Continuing the theme of low fat yet flavorful, texture-rich, nutritious salads, here’s a Chicken, Asparagus and Quinoa salad that's sure to please. It’s a great way to make use of leftover roast chicken or an idea for using a rotisserie chicken from the supermarket. This salad makes a nice summer lunch. If quinoa is hard to find, or simply not your thing, use couscous or whole grain rice instead.
