Couscous Salad

Enjoy this low-fat couscous salad featuring whole-grain couscous, garbanzo beans, red onion, tomatoes, cucumber and mint, tossed with a lemon and olive oil dressing. This is a great salad to go with grilled or broiled chicken and fish, or simply enjoy it on its own for a healthy and nutritious lunch.

The Great Grill-Out Recipe Exchange

The couscous salad would make a great accompaniment to these wonderful Shish Taouk, from Saad Fayed, About's Guide to Middle Eastern Food. Cubes of chicken breast are marinated in a special blend of spices to produce succulent, flavorful kebabs. Saad suggests using onions, mushrooms and green peppers if you want to add some veggies to your kebabs.
