Low Fat Summer Cheesecake

Wednesday May 24, 2006
Cheesecake is one of the ultimate high-fat desserts. A New York-style cheesecake can pack close to 600 calories and more than 40 grams of fat per serving, thanks to the full-fat cream cheese filling and the butter used in the cracker base. Here’s a much lighter cheesecake, which has 211 calories per slice and contains a little under 7 grams of fat per serving. Enjoy this low fat summer cheesecake with seasonal fresh berries of your choice.

The Great Grill-Out Recipe Exchange

Try some Grilled Peppers and Onions, from Chelsie Kenyon, About’s Guide to Mexican Cuisine. These would make a great accompaniment to grilled chicken or fish.

Speaking of fish, try this recipe for Grilled Fish, or Psari sta Karvouna, from Nancy Gaifyllia, About’s Guide to Greek Food. Whether it's a beautiful steak from a large fish or a whole fish from today's catch, the simplicity of grilled fish with a minimum of fuss is a Greek specialty.
