Roasted Garlic

Have you tried the nutty, mellow flavor of roasted garlic? Try spreading it on a warm baguette for a low-fat garlic bread. Blend the pulp into fat-free or low-fat mayonnaise; add some to soups, sauces or dips; stir some into cooked pasta or mashed potatoes; or spread it on a pizza base. Roasting is a great way to add flavor without the bitterness and pungency normally associated with this herb. Even those who usually don't like garlic might be won over. Here's how to roast garlic.
