Low Fat Sole with Spinach

Sole fillets are relatively cheap and easy to find. They’re also low fat and a good source of important vitamins and minerals. This baked sole with spinach dish is colorful, nutritious and easy to make, using only six ingredients and one baking dish. What could be simpler? Enjoy this low fat fish supper with whole grain rice, couscous or quinoa, or some crusty whole grain bread.
