Lemon-Parsley Halibut

Here in the Pacific Northwest, we are enjoying the arrival of fresh Alaskan halibut in stores—just another sign that spring is upon us. Halibut is a truly nutrient-dense fish, delivering a number of important vitamins and minerals, such as magnesium, phosphorus, selenium and vitamins B6 and B12, for relatively few calories.

Halibut is also a good source of omega-3 fatty acids, which are associated with a number of cardiovascular benefits. A firm texture combined with a mild, sweet flavor makes halibut a versatile fish that lends itself to a number of flavors. But sometimes, instead of marrying it with anything spicy or complex, I like to broil halibut fillets with a simple combination of lemon and parsley.
