Apple, Pear and Quince Tart

Quinces look a lot like apples and smell just heavenly. The quince is a hard fruit that takes some cutting. When cooked, however, it turns slightly pinkish and softens beautifully. Try poaching sliced quinces in some wine, pomegranate juice or apple cider; or try this low fat Apple, Pear and Quince Tart. A spicy gingersnap base complements the fruit nicely.
