Low Fat Chicken Enchiladas

These creamy, low fat chicken enchiladas use ingredients you probably have on hand in your pantry and refrigerator. They’re a great way to use leftover chicken or a store-bought rotisserie chicken. A blend of low fat yogurt, reduced fat sour cream, plus sparing use of reduced fat cheese, make this one creamy dish you don’t have to feel guilty about.
