Sole With Asparagus and Potatoes

Here’s a delicious oven-cooked meal that involves very little clean up. Wrap asparagus spears in fresh sole fillets and bake them on top of sliced potatoes. Add just a little olive oil and a generous squeeze of lemon juice, and you'll have a highly nutritious, low fat dinner.
