Chill Out With Gazpacho

Keep cool this summer by eating soup—cold soup, of course. Gazpacho combines the fresh flavors of juicy vine-ripe tomatoes, cucumbers, green peppers, red onions and cilantro. Round out the flavor of this vitamin-filled soup by adding vegetable juice, a little extra-virgin olive oil, some balsamic vinegar and a hint of Worcestershire sauce. Enjoy with some crusty whole grain bread for a light meal on a hot and humid day, when the last thing you want to do is cook.
