Lemon Zucchini Bread

Moist and delicious, this low fat lemon zucchini bread has become a new favorite in our house. At first my children were suspicious when they saw me grating a green vegetable. “Mom, you said you were making a cake.” A quick bread, actually, but no matter. Suspicion gave way to approval once they tried a warm slice of the finished bread. I see it as one minuscule step to getting my family to eat more vegetables. And as imaginative as I try to be, I’m still a long way from letting them dip their broccoli in chocolate syrup.
