Low Fat Football Fare

Monday January 17, 2005
With the countdown to Super Bowl XXXIX already under way, and the conference championships coming this weekend, you might be thinking about how to feed an ardent and hungry crowd during the big games. While I would hardly suggest to a pack of football fans that they should eat dainty little sandwiches, you can serve some healthier fare without them noticing too much. Here are a few suggestions:
  • Do have plenty of cut fruit and veggies on hand, with an assortment of low fat dips using low fat or fat free cream cheeses or sour cream
  • Offer pretzels, baked chips, unsalted nuts and dried fruit
  • Serve potato skins topped with reduced fat cheese or low fat sour cream and chopped chives
  • Oven-fry some skinless chicken pieces dipped in egg white and coated in crushed cornflakes
  • Serve this low fat game day chili or Southwestern-style lasagna and some healthy cornbread
